Ensaladang Talong
Ingredients:
4 large eggplants(talong)
2 onions, cubed
4 medium-sized tomatoes, cubed
2 tablespoons bagoong isda or fish sauce*
*You may also used the combination of garlic, soy sauce, vinegar, chili flakes, salt and pepper instead of bagoong isda.
Procedures:
Step 1
Grill eggplants until skin are charred and blister. (My mom grills it using gas stove just put a wire rack and use very low heat if you don't have a ready quick grill)
In a bowl, wash eggplant in running water, and peel off the skin. Remove the crown and the stem.
Step 2
In a bowl, mash lightly the eggplants with a fork then add onions and tomatoes.
Serve with bagoong isda or fish sauce(patis).
