Let's cook our families favorite! Pata Tim
Ingredients
1 Pork Leg (pata)
½ cup Lee Kum Kee Soy Sauce
½ cup Panda Brand Oyster Sauce
½ cup Brown Sugar
1 head Garlic; chopped
6 cups Pork Broth
2 tablespoons Cornstarch (dissolved in ½ cup water)
½ small Cabbage; cut into quarters
To taste Salt and Pepper
2 Bay Leaves
4 pieces Star Anise
2 cups Sprite or Calamansi Soda or Pineapple juice
1 Bundle Bok Choy
100g Baby Corn; sliced in halves
Directions
1. Prepare a large pot or use a pressure cooker if available, place pata then pour enough water to cover the meat.
2. Let it boil for 1 hour or until tender. Add more water if necessary then drain and reserve the broth.
3. In a large frying pan, heat oil then fry pork pata until golden brown. After frying, dry the meat on a paper towel and drain oil.
4. In another regular pan, heat oil and sauté garlic then add fried pata, broth, soda, soy sauce, oyster sauce, bay leaves, star anise and brown sugar.
5. Let it simmer for 30 minutes or until meat is very tender. Adjust water if necessary.
6. Add cornstarch dissolved in little water. Add vegetables and adjust seasoning to taste.
7. Continue to simmer until you achieve a thick sauce consistency.
8. Transfer to serving plate then serve with hot steamed rice. Enjoy!
