Beef Caldereta Special

My family loves Kalderetang Baka (Beef Caldereta or Beef Stew). I have cooked Beef Caldereta Special in many occasions like Reunion, Family gathering and Holiday season. They just love the tasty creamy sauce. Though there are many versions I see on internet. My recipe is nevertheless special in version and easiest way to cook. This is by far my delicious and quick version of Kalderetang Baka. 😘
First thing you may want to keep in mind, is to cook the beef perfectly. Not hard and not overly cooked that its almost stripping off the cubes. Simmer the beef for one hour and 45 minutes. Using 2 large chopped white onion and herbs like basil, laurel leaves, and pepper will make it aromatic in flavor and taste. Lets get started!

Ingredients for Beef Caldereta:
1 kilo Beef Cubes
1 kilo Del Monte Tomato Sauce Filipino Style
2 tbsp Tomato Paste
1 Reno Liver Spread
2 Large White Onion chopped
1 head Garlic chopped
1 Small Bottle Pitted Green Olives
2 Carrots sliced into bite size
2 Potatoes cut in squares
2 Green Bell pepper cut into strips
1 Nestle All Purpose Cream
1 cup Grated Cheese
Pepper
Laurel Leaves
Dried Basil leaves
Salt
4 Spoon Fish Sauce
2 tbsp Soy Sauce
How to Cook Beef Caldereta:
1. Boil and simmer beef cubes, onions, laurel, basil and pepper in at least 1 liter water for 1 1/2 hours. Remove laurel leaves after.
2. Saute Garlic on a separate pan. Drain from oil once garlic is brownish and cooked.
3. Beef cubes should be cook exactly 1 hr and 45 mins. So you need to start adding other ingredients by last 15 minutes
*Leave atleast 2 cups beef broth on your beef.
4. Add in chopped garlic
5. Add in Tomato Sauce, Tomato paste, Carrots, Potatoes and green pitted olives.
6. Simmer for 5 minutes while stirring occasionaly.
7. Add in Liver spread and Nestle All Purpose cream
8. Adjust taste by adding soy sauce, fish sauce and pinch of salt.
9. Add Bell Pepper and 1 cup grated cheese.
10. Sauce should be thick and smooth.
Note: Tomato paste helps the sauce to become smooth.
Instead of using gms, you can definitely use fish sauce as an alternate taste booster. You can add 2 tbsp cornstarch diluted on 2 tbsp water to thicken the sauce if it's needed.
So there ya go. Quick and non complicated way of cooking Beef Caldereta! Believe me it taste yummier.
