Crispy Pork Binagoongan
Dive in to this sumptuous meal! My version of Pork Binagoongan with Fried Eggplant. Need I say more? Extra rice pleasssse!
Anchovies is the best alternative for Bagoong. For some of you that is not so familiar with this ingredient. It's a fermented krill in salt. Very tasty, salty and flavorful. You can buy Bagoong in Filipino store.
Pork Binagoongan Ingredients:
1 kilo Pork (Liempo) cut into cubes
1 Cup Bagoong Alamang
1/4 cup white vinegar
1 Onion Finely Chopped
1 Head Garlic Finely chopped
1 Large tomato diced
3 Large eggplants cut into rectangular
2 Spoon Brown Sugar
Pepper
2 cups water
How to Cook Binagoongan:
1. Simmer Pork in 1 cup of water until all water evaporates and pork cooks in its own oil. You can add 1-2 tbsp oil. Using low heat until pork is golden brown and crispy. You can drizzle water into pork while it cooks in oil. This will make pork skin pops out and crunchy.
2. Mix in white vinegar with 2 tbsp water to deglaze.
3. In a separate pan, sautee garlic and onion, until brown and transluscent respectively. Add in tomatoes. Then, add it in your pork.
3. Add bagoong. Sautee and cook for a few minutes and check if bagoong is already cooked. Bagoong should be dark brown once cooked.
4. Add your brown sugar, pepper and mix thoroughly. Avoid burning the sugar though. So just use low heat.
5. Add 2 cups of water and simmer in very low heat.
6. On a separate frying pan, fry your eggplants in oil until eggplant is slightly soft. Drain oil.
7. Add eggplant to Pork Binagoongan. Mix it. Turn off heat.
Serve with Hot cup of rice! Did I say prepare an extra rice? Nom Nom!
