Filipino Style Carbonara
This recipe is a Filipino style Carbonara. Unlike the traditional Carbonara where you need to serve it right away because you need to toss the egg into the pasta. While the sauce in this recipe is cooked and sauteed in garlic and onion. You can serve it whenever you want. Just store the sauce in separate container, reheat and serve. Not everyone know this technique of using Powdered cream of mushroom. This makes the sauce thick, flavorful and it backs up the mushroom ingredient. I used Knorr cream of mushroom to make a thick sauce and All purpose cream to make it creamy and delicious. For Carbonara type of pasta, the wider the pasta, the more you need to make the sauce thicker. Because it needs to stick on the pasta. While the regular spaghetti pasta does require a less thick sauce. You can add cornstarch diluted in teaspoon of water if your sauce is not thick enough. Also, don't forget to match it with Toasted Garlic bread. The garlic bread will accentuate the palette when the creamy sauce becomes boring in taste. Any bread will do, even Pandesal bread, just spread butter, sprinkle garlic powder and sprinkle dried chopped basil on top. Toast it on skillet without oil, very low heat.
Voila! French Style Garlic bread.
Ingredients for Carbonara:
500 grams Fettuccine
1 sachet Knorr Cream of Mushroom powder
1 can slice mushrooms
1 Pack Bacon cut into small square
Fiesta Ham - cut into small cubes (about the same amount of bacon)
1 Pack Nestle All Purpose Cream
1 Small Onion
4 tbsp chopped garlic
2-3 cups water
1 tbsp Dried basil
Black Pepper
Salt
Parmesan Cheese
Queso Processed Cheese
1 tbsp Sugar
Procedure in Cooking Carbonara:
1. Fry Bacon according to your preference. I prefer tender cooked bacon because its easy to chew. Drain and set aside.
2. Repeat the same for ham.
3. Sautee garlic until brownish followed by onion until translucent.
4. Add in Sliced mushrooms. Saute for a few minutes.
5. Pour 2-3 cups of water, followed by Knorr Cream of Mushroom powder. Stir until powder is dissolve. Sauce should have thick consistency.
6. Add in Bacon, Ham. Simmer until sauce is thick.
7. Pour in chilled Nestle All Purpose Cream
8. Season salt, pepper, basil and 1 tbsp sugar.
Cook it today!
