Misua with Meatballs and Patola Soup - Albondigas

This thin soup recipe is so delicious and light in taste. Misua chinese noodles is a soft and as thin as a thread, it will slip and slide in your mouth with the broth infused soup. This recipe soup is special than the others because I used three main ingredients: Pork Meatballs, Chicken balls and Patola vegetable. It's heavenly when served warm. Other misua soup normaly just have 2 main ingredients like: Misua and Meatballs or Misua and Patola.

This noodles should be the last ingredients to be cooked in your pot.  Because it only takes 2 minutes to cook. Please note that overcooking for more than 2 minutes may cause your soup to taste a bit bitter.  So lets get started!
Ingredients for meatballs:
Yield:  Approx 15 pcs.
1/2 kilo Ground Pork
1 Clove garlic (mince)
1 Onion (mince)
1 Egg
2 tbsp of salt
1 tbsp of Ground pepper
1-3 tbsp of Light Soy Sauce (Maggie Savor)
2-3 tbsp flour
Pinch of Dried Basil
1-2 tbsp sugar (optional)
Soup Ingredients:
1 Onion (mince)
1 Clove garlic (mince)
2 Packs Misua noodles (please see sample pack above)
10-12 pcs Chicken balls (adjust to your preference)
1 Medium Patola peeled and sliced about half an inch thin
Pinch of Fresh or dried Basil leaves
1-3 tbsp soy sauce
3-4 tbsp Patis or Fish sauce (use salt as alternative) adjust amt according to your preference.
1-2 Spoon of sugar
1 Chicken broth cubes
7 Glass of water (I used regular glass and not a cup for measurent)
Procedure:
  1. Mix all meatballs ingredients thoroughly until very sticky and easy to mold.  Use spoon or scoop equal parts and mold into palm size balls. Set aside.
  2. In a pot,  saute garlic and onion.
  3. Once garlic is brown and onion is translucent,  pour in water.  Simmer for a few minutes.  Then put meatballs one by one.
  4. Simmer for 5-10 minutes to cook the meat.
  5. Add in patola and chicken balls and simmer for a few minutes. Once patola is soft and chicken balls are bigger it's good to go to your next step.
  6. Add all seasoning,  fish sauce,  soy sauce,  basil leaves, chicken cubes, sugar,  salt and pepper. Adjust to preferred taste. It should be light in taste because meatballs and chicken balls will add the infusion of saltiness. So,  there is no need to make the soup too much salty.
  7. Finally,  add in 2 packs of Misua.  Simmer only for exactly 2 minutes.  Turn of heat.      img1447574927572Voila! Ready to serve. Enjoy your Misua soup.  ðŸ˜‰
